Realising their potential, he tracked down the owner and persuaded him to coax them back into production. Between them they christened the vineyard Somaro, after the rare breed of donkeys that once worked the land. Mario matured this wine for six months in small French oak casks, bottling with minimal filtration to preserve its flavour and complexity. Enjoy with roast beef, spicy pasta or a hearty casserole.
